Jordan with a side of Tofu

I have a small obsession. It's called Tofu.

I eat it for breakfast. I eat it for lunch. I eat it for dinner. Not on the same day, though. And honestly, I eat it only a few times per week. But I do love it. A lot.

This weekend I made yet another tofu scramble (what?s new) but I mixed in a bunch of veggies: eggplant, mushrooms, kale and bell pepper. Salt, pepper, spice and a side of sprouted toast... now that?s what I call a breakfast!
