Kabigting's Halo-Halo: The Pride of Arayat - now in N.S. Amoranto, Quezon City
Summer or Spring is never complete without a Halo-halo treats. Filipinos has concocted various types of a halo-halo. First let's define a Halo-halo - from Tagalog word "halo" mean to mix, a popular Filipino dessert or snack served in a tall glass or bowl, made by combining shave ice and evaporated milk. Mixed with choices of several sweet ingredients like: kidney beans, garbanzos, sugar palm fruit, macapuno, jackfruit, gulaman, tapioca or sago, nata de coco, sweet potato or kamote, pinipig & sugar. Usually topped with milk and/or a combination of ice cream, leche flan or ube halaya. Armed with determination she leaves off her daily job and focus to their family business. Kabigting in Metro Manila is a lone outlet outside Pampanga. The Kabigting's has 5 store in Pampanga, including those in Marquee Mall and Robinson's Starmills. Kabigting originated from Arayat, Pampanga since 1970. In the previous food blog I had, I featured a number of restaurants from Pampanga including the C' Italian Dining, Bretto's, Bale Kapampangan, Cold Spoon, Spencer's Fusion Bar, etc. Pampanga being known as the culinary capital of the Philippines. It's like a competitor's game of challenge on how can you come up with an intensely good halo-halo flavor using the least ingredients. Kabigting formulated a concoction using 3 major ingredients: sweet beans halaya, pastillas [made from carabao's milk & corn kernel. The result was favored by their kababayans, now the family of Kabigting is well-known for their uniquely taste halo-halo. Kabigting's also come up with other food specialty, among their bestseller are: Palabok, Lumpia Ubod & Dinuguan. It is said, a halo-halo is best eaten with a palabok. Ize's family also introduced their home-made blend of Pinoy's all-time favorite with the likes of: Tapsilog PhP100 Longsilog PhP90 Bangusilog PhP90 Embosilog PhP90 Tokwa't Baboy PhP60 By the way, the Pastillas in a box cost PhP70, not bad for healthy carabao's milk dessert. Trivia: #1 Did you know that during the presidential campaign of Gloria Macapagal-Arroyo in Pampanga, she commissioned her kababayan to give almost 2,000 Kabigting's halo-halo to her followers. During that period the Kabigting's ice shaver machines malfunction, the staff and neighbors help one another to manually shave the ice using the "pangkaskas ng yelo". #2 GMA again, Gloria used to closed down the whole Robinson's Starmills Foodcourt just to eat Kabigting's halo-halo. #3 GMA can finished 2 tall glass of Kabigiting's halo-halo.
