Kalla Paniyaram/Maida Sweet Balls - ????? ?????????? ??? ?????????????
Wishing You All a Very Happy Tamil New Year 2011.Kalla paniyaram is traditional south indian sweet..My mom n grandma use to make this for Feast n Padaiyal. I love this very much i use to eat lot during my childhood days, but now b'coz of toothache n health conscious i m not able to eat any sweet :( This is my 1st try..This is my 150th Post :o :) jaggery n chana dal mixture dipped in maida batter n deep fried...so this not for diet n health conscious people kids can enjoy this ..n once a while for special event can njoy this traditional sweet... right?? Ingredients Maida 1 cupChanna dal 1 and 1/4 cupJaggery 1 cupCardamom 5-6 (powdered)Nuts (cashew n almonds) 1 fist (finley chopped)Salt 1/4 tspCooking soda a small pinchTurmeric powder a small pinchOil for deep fryingMethod Pressure cook chana dal and allow to cool and keep aside.Powder the jaggery and put the cooked chana dal n jaggery in a blender and blend well to smooth paste without water. Then transfer the grounded paste to a bowl and add chopped nuts and cardamom powder, mix well.Divide it into small lemon size balls (come around 25 balls) and keep aside.Take a wide bowl, add maida, salt, turmeric powder and cooking soda stir well and using water make it to the little thick batter (thicker than bonda mix).Heat oil in a wok for deep frying. When the oil gets really hot, take one ball at a time n dip inthe maida batter and drop carefully in to the hot oil , fry till light brown on both sides.(just like puri for for few minutes only..don't let it in oil for long time).Do for all the balls and drain it in paper towel.Thats it...yummy kalla paniyaram is ready and serve warm. Note: If the maida batter is thin ..u will get thin crust with more sweet filling...
