Kasoori Methi Chicken

This recipe uses Kasoori methi or fenugreek which is dried and crushed methi leaves. Its gives the dish a distinct flavour.


1) 1 pound Chicken (boneless and skinless) cut into medium pieces

2) 1 cup yoghurt

3) 1/2 cup onions finely chopped

4) 2-3 cloves of garlic finely chopped

5) 1 inch piece of ginger grated

6) 2-3 green chillies chopped

7) 1/2 cup tomatoes chopped

8) 2 tablespoon kasoori methi or fenugreek

9) 1/4 teaspoon turmeric powder

10) 1/2 teaspoon red chilli powder

11) 1/2 teaspoon dhania-jeera powder / cilantro-cumin powder

12) 2-3 cloves

13) 3-4 peppercorns

14) salt to taste

15) 1 tablespoon oil

16) 2 tablespoon butter

17) 2 tablespoon fresh cilanto for the garnish


Preparation.

1)In a bowl whisk yoghurt and add salt, turmeric powder, red chilli powder , cilantro-cumin powder, cloves and peppercorns. Add the chicken pieces and marinate the chicken for about 30 minutes.

2) Heat oil in a pan or a handi. Add butter. Add onions and saute until golden brown.

3) Then add garlic and ginger and stir fry for about 2-3 minutes.

4) Add the tomatoes and green chillies. Fry this until the oil leaves the masala.

5) Add the Marinated Chicken. Bring to a boil and cover and let it simmer for about 20- 25 minutes until the chicken is almost cooked.

6) Sprinkle fenugreek and let it simmer for about 2-3 minutes.

7) Garnish with Cilantro .

8) Kasoori methi Chicken is ready to be served along with parathas , naan or kulcha.
