Kathirikai varuval /Brinjal fry

Ingredients :


Brinjal (small) -- 5 no.

Onions (julienne) -- 1/2
Curry leaves -- 1 sprig
Urad dal -- 1/4 tsp

Red chilli powder -- 1/4 to 1/2 tsp
Coriander powder -- 1 1 /2 tsp
cumin Powder -- 1/4 tsp
salt -- acc to taste
Oil -- 1 1/2 tbsp
water  -- as needed

Method :
Cut the brinjals vertically into 4 equal halves. Soak the brinjals in water otherwise it will turn black. In a wide pan, add oil and the tempering by adding urad dal and curry leaves. wait for the urad dal to turn golden brown. Then add the onions and saute well. Now add the brinjals and scald well. I would half cook the brinjals by sauteing it. Then add the water may be half a cup of water and salt . Cook it . Finally add all the masala powders (red chilli, coariander,cumin powder) and scald well. Combine well for atleast 3 minutes so that the masala powder gets into the brinjals.. This goes well for sambar rice, curd rice...
