Kathirikai Varuval (Eggplant fry)
This is yummy side dish, carve us to make again & again. Very good condiments with sambar, rasam & variety rice. Ingredients: Kathirikai (Eggplant) - 5 (medium) Turmeric powder - 1/4 spn Curry powder (or) kuzhambu milagai thool - 3 spn Tamarind paste - 1/4 spn Rawrice powder - 3/4 spn Salt - to taste Oil - As required for shallow fry Method: Dice the eggplant in oval or circle shape. Mix Curry powder, turmeric powder, tamarind paste, rice powder, salt with 1 spn oil. Sprinkle little water to make it a thick paste. Apply this paste evenly on all sides of the eggplant and marinate for 10mins. Heat the grindle, apply little oil and shallow fry the eggplant untill they are crispy. related searches : Kathirikai
