-Ras Malai is a popular South-Asian snack / dessert, popular throughout India.It consists of sugary, cream to yellow-colored balls (or flattened balls) of paneer soaked in malai (clotted cream) flavored with cardamom.
I made this divine,delicate n heavenly dessert for Raksha Bandhan...As its my bros fav,remembering him..My hubbys fav too..and love tht its my sons fav too nowadays...now i knw tht the sweet men(my bro,my hubby,my son) in my life r why so sweet...haha...
For Balls/Malai-makes about 10 balls
11/2 cups part skim Ricotta Cheese
little less than 1/4 cup Sugar,¼ tsp cardamon powder,1 tsp Finely crushed Pistachio,1 tblsp APF
3 cups Milk(i used 2%)
3/4 cup sugar
Few saffron strands
1/2tsp crushed cardamom seeds
3 tbsp crushed pistachios,1 tblsp crushed almond
To make the syrup/sauce or Ras-
Boil the milk and Thicken by simmering n stirring over low heat for few minutes(10mins)
Add sugar, cardamom, saffron strands,pista and almond powder. Heat for a few minutes and allow them cool.Refrigerate til chilled.
For Malai/Ricotta Balls-
Take Cheese out of the fridge and let it come to room temperature.Preheat oven to 350deg F.
Mix sugar,cardomom seeds,pista and flour with the Ricotta cheese by using a spatula.
Make small balls and keep onto a greased nonstick baking sheet.
Bake at 350 degrees for 30 minutes or until it sets and is light brown in color.Insert a toothpick & check.If the toothpick comes out clean,take the tray out from the oven.Cool.
Add the cold balls to Milk.Refrigerate..Serve cold
1)For Baking u can add the mixture in a greased cake pan and bake..once cooled cut into desired shape(sqaure,diamond)and add to chilled milk.
2)Or simply spoon the mixture in a greased muffin pan and bake.
3)The Milk and Balls shld b chilled.Dont add warm balls to warm milk.
4)The Ras is usually thin..But if u like u can add the balls to thickened milk/Basundi as well..
5)U can use store bought rasgullas,squeeze liquid and add to the milk.
6)Also Balls can b made out of homemade Cottage Cheese(Paneer)..wil share this one soon...
7)I powdered the nuts and added,u can chop them and add to the milk as well.APPLE-PISTA MILKSHAKE-
My son hates to drink milk.Being small he dont even eat nuts and i m afraid to give him whole as theres a fear tht he wil swallow them..so usually i powder nuts and add to his milk with fruit..and have the satisfaction tht he is having fruit,milk and nut in his diet...and he loves this for his bf...
Apple-1,peeled and chopped into chunks
Powdered Pista-3 tblsp
2% Milk-1/2cup(can use whole)
Cold water-1/2cup(can use just milk)
Add all to the blender and blend.Garnish with powdered pista.Serve Chilled.
