Pink Hot Chocolate  Serves: 2

Ingredients:

½ cup White chocolate chips

1/2 Teaspoon Vanilla extract

2 cups low fat milk or Vanilla soy milk

2 tablespoons Maraschino Cherry juice

 Directions

1. Put white chocolate chips in a mixing bowl. Set aside until ready to use. Heat the milk in a small saucepan over very low heat until steaming. Do not bring to a boil.

2. Pour heated milk over chocolate chips.  Add vanilla and  Maraschino cherry juice. Whisk to blend.

 To garnish:

1. Take 2 large marshmallows and dust with 1/4 teaspoon cornstarch. Flatten each marshmallow with your hand by pressing down slightly.

2. Use a ½ inch heart- shaped pastry cutter to cut out the marshmallow.

3. Garnish hot chocolate with marshmallow hearts.
