Kill that cold!
I am still battling a cold (ugh), so another dish laden in garlic and chilli sprung to mind tonight ? Tomato risotto with chilli prawns. I must admit that I normally cheat when I make risotto and opt for oven baked varieties. However spending a quiet Friday night at home with Mr BBB meant that I didn?t really have any excuse to take the ?easy? option without feeling guilty. The reward? Beautifully creamy risotto that you simply cannot make when baked in the oven. I think I am now back in love with traditional risotto, despite the time and effort required. I kept tonight?s risotto simple, using with white wine, tomato paste, onion and a good dollop of butter. Oh and rice and stock of course. Then it was stir, stir, stir until the liquid was absorbed. Once cooked, I removed the risotto from the heat and stirred through a little more butter (for that lovely sheen) and some freshly grated parmesan. Meanwhile, I dodged the growing dishes pile and sautéed the prawns in a good amount of fresh red chilli and garlic, stirring through some chopped flat leaf parsley right at the end. Once cooked, I piled up the risotto on a bed of leafy greens (spinach, kale and rocket), and topped with the chilli / garlic prawns. Let?s just say the time and effort was worth it! The risotto was creamy and full of flavour, and the prawns had a nice bit of heat to them. Here?s hoping that the garlic + chilli combination will finally get rid of this cold! What are your plans for the weekend? I am hoping to get out for a run or a ride (maybe both), do some baking and get down to the National Gallery over the weekend.
