Kinda Corny
I made corn muffins again tonight. If you read my blog regularly, you have heard me profess my love for corn bread/muffins before. I guess you could say that I am bound and determined to try as many corn bread/muffin recipes as I can before I die. Tonight I gave the Kinda Corny Muffins from Eat, Drink, & Be Vegan a try. The name of this recipe is very appropriate, seeing as Dreena's recipe titles are kinda corny (No hard feelings Dreena!). Joking aside, these muffins were indeed very...well, corny. They have both cornmeal and corn kernels in them. They are also made with spelt flour instead of white all-purpose flour. The muffins came out very dense, which is probably due to the fact that cornmeal and spelt flour are heavy. The denseness wasn't a bad thing though, they were still nice and moist! Spelt flour gets my vote over all-purpose flour any day, so this recipe gets 2 thumbs up! Kinda Corny Muffins ![]() Even though I probably could have just eaten these muffins for dinner and been happy, I served these alongside Spicy Beer and Black Bean Soup. The soup was yummy!
