Kokosove Kiflice (Coconut Crescents)
These delicious biscuits are the perfect accompaniment with coffee or just to have when you feel the need for a little something. The kids always appear with big glasses of milk in hand when I make these and actually so does hubby. I try and have a bit of self control and take just one with a cup of coffee or tea but it never lasts long and I am back with coffee in hand grabbing a plateful to scoff down.
Ingredients: (Makes around 40) 250 grams of unsalted butter1 and 3/4 cups of plain flour1 and 1/2 cups of self-raising flour1 and 1/2 cups of desiccated coconut3/4 of a cup of white sugarjuice of 1 lemon2 eggs2 cups of icing sugar to roll in Method: Preheat oven to 180 degrees celcius.Sift both flours into a large bowl. Rub in butter until mixture resembles breadcrumbs.Stir in sugar and coconut then eggs and lemon juice then using hand slightly knead until mixture comes together.Take a small piece of mixture and shape to be around the size of a 'king prawn'. Repeat with remaining mixture placing on a baking tray as you go.Bake for around 20 minutes or until light brown. Remove from oven and allow to cool completely before rolling in icing sugar and storing in an airtight container. *Note: These biscuits taste better the next day.
