Lechon Kawali (Deep Fried Pork Belly) and Ginisang Kalabasa (Squash Soup)
Lechon Kawali We`ve been craving for these for months now, well for me, but I dont have the guts to cook one.. and at last I did.. whew.. does it look lechon kawali (deep-fried pork belly) to you? well for us it looks and tastes one..yup..its crispy..ahh..hubby liked it so much that he needed to refill his plate with rice for four times..yikes! after that he realized that his eating too much and blame me..my cooking..and I find it cute and sweet.. I paired the lechon kawali with ginisang kalabasa (stir fried squash), at home my mom used to call it that way, but hubby called it bulanglang na kalabasa, all i know is that there`s a ginger if its bulanglang.. wahhh whatever....really confusing... the squash had soup in it.. so is it, squash soup? wahh..I dont know.... what is it then? Ginisang Kalabasa na may sabaw? super haba ng name ah! Squash Soup will do.. Anyway, so much for that mind buggling dish title.. what`s important is we enjoyed the dish and satisfy our cravings..and a big nice hug from hubby! yum! Squash soup Ingredients: Lechon Kawali 250 g Pork Belly 4 cups water 1/2 white onion, chopped 1 tbsp whole peppercorns salt oil Procedure 1. Combine everything in the pot, except for oil... let it simmer until the pork is tender. 2. Remove pork and pat it dry before deep frying in medium heat until golden brown. Others do store it in the fridge for a couple of hours before frying, well i didnt do that, for I dont have enough time..we are starving.. 3. For the dipping sauce, we dont have lechon sauce here, hubby made vinegar with garlic and chili.. that`s it.. or you can use soysauce, vinegar and chili. your choice.. Ingredients: Squash Soup 100g Squash, sliced 2 cups broth ( I used the above broth, yup from the pork belly, removing excess oil in it) or use rice water.. 3 cloves garlic, smashed and chopped half white onion, chopped pepper, didn't add salt `coz the broth is tasty enough for me.. spring onions Procedure: 1. Saute garlic and onion, 2. Add broth, squash and pepper. simmer until squash is tender 3. Add spring onions.. serve hot.. Note: you can add shrimp or pork in it.. but I didnt we have lechon kawali to pair it with.. Note again, we dont have Fish Sauce so we use salt instead..
