Lemon Dessert Wafers
![]() Here is another dainty cookie recipe for you. This one is for lemon wafers. The lemon flavor is delicate and not at all over-powering. I think it makes for a light after dinner treat. 1 cup butter 3/4 cup sugar 1 egg 2 egg whites 1 TBS. lemon juice 1/2 tsp. vanilla pinch of salt 1 cup flour In a large bowl, cream butter and sugar until fluffy. Add egg, egg whites, lemon juice, salt, and vanilla; beat until mixture is smooth and fluffy (at least 2 minutes). Add flour to creamed mixture, stir until a thick batter forms. Spoon batter into a pastry bag fitted with a large round tip. Pipe heaping teaspoonfuls of batter 3 inches apart onto a parchment lined cookie sheet. Bake at 375 for 7 minutes or just until edges are beginning to turn golden brown. Immediately transfer cookies to a wire rack to cool. Recipes makes about 7 dozen cookies.
