Lemon Thyme Bread
Although Simply in Season warned that lemon thyme would be difficult to find, it really wasn’t. I saw it at the farmer’s market for sale in both picked form ($1) and in plant form ($2). I decided to buy the plant. Unfortunately it died. Next time I went to the farmer’s market I went from stall to stall, with the arrival of spring vegetables there weren’t as many stands selling already-picked herbs. I stopped at the herb-sellers, and at the third one I finally found it! The moral of the story: Go early. And don’t let your herbs die before you get them planted. FOR PRINTABLE VERSION CLICK HERE: Lemon Thyme Bread 2 cups flour 1. Stir together flour, baking powder, and salt and set aside. 2. In a separate bowl, beat butter until creamy with an electric beater. Gradually add sugar, beating until fluffy. Add eggs one at a time, beating well after each addition. Mix in remaining ingredients. 3. Add milk to bowl alternately with dry ingredients, mixing until smooth. Pour batter into greased and floured 8×4 inch loaf pan. Bake in preheated oven at 325F for 55-60 minutes. Let stand in pan for 5 minutes and remove to wire rack. 4. While loaf is still warm, mix together powdered sugar and lemon juice in a small bowl and slowly pour glaze over the warm loaf. Servings: 12 The Verdict: I brought this to my mom & dad’s for Sunday dinner, and it was a big hit. (I’m quickly becoming a favored guest). Even my brother in law, who doesn’t usually like lemon cake with lemon frosting, liked this because the lemon wasn’t too overpowering. I couldn’t really taste the thyme, just a nice subtle lemon flavor and a hint of something else. The photo didn’t turn out the best because I forgot to grease / oil the pan before baking, so I wasn’t able to get it out of the pan without it crumbling. And then DH put tinfoil on top for the drive down, and I didn’t get a photo beforehand so that’s why the frosting is missing in places. Oh, the joy of being a food blogger!
