Light and Healthy Egg and Feta Salad

Everything in life can be related to food, in some way. Food is something we need to survive. It is also pleasurable, addicting, satisfying, and sometimes bad for us. So what is worse for your heart? A huge, greasy burger? Or eating a plain salad while he enjoys a fat piece of cake...? Jealousy is a killer too ya know.

"It's kinda like how we still eat the corn-dog at the fair, and then the elephant ear, maybe garlic fries too, even though we know it will most likely give us a heart attack..."

Grandma gave me a good amount of hard boiled eggs yesterday, so I made up this recipe for egg salad. I used half the yolks to reduce fat and calories. Crunchy celery, dijon mustard, sun-dried tomatoes, and spicy cayenne. I just ate it, in it's simplicity, with crisp lettuce.

Egg and Feta Salad ( 2 servings)

6 hard-boiled eggs - discard three yolks
1 tbsp greek yogurt
2 tbsp feta
1 tbsp dijon or whole grain mustard
1/2 c. minced celery
1/2 tsp salt
1/4 tsp pepper
1/4 tsp garlic powder 
1/4 tsp cumin
Dash cayenne pepper
*optional - 2 tbsp marinated sun-dried tomatoes, chopped


1) Easiest instructions ever- Combine all, mix well!
