Lime Glazed Coconut Banana Bread Recipe
Here’s an pretty looking lime glazed coconut banana bread recipe in a form of a muffin/cupcake. The lime and the coconut aroma goes well with the sweetness of the banana bread. PREP TIME: 25 Min INGREDIENTS FOR THE BREAD * 2 c flour INGREDIENTS FOR GLAZE * 1/2 c powdered sugar DIRECTIONS 1. Preheat over to 350 degrees. Butter a loaf pan or line & set aside. 2. Whisk flour, baking soda & salt together and set aside. 3. Cream together butter & sugar until light and fluffy. Add eggs, beat until well combined. 4. Add mashed bananas, sour cream, milk and vanilla. Add flour mixture and stir until just combined. Stir in 1/2 c coconut. 5. Pour into prepared or fancy paper moulds. Sprinkle with reserved coconut. 6. Bake loaf for about an hour or until skewer inserted in centre comes out clean. If top is browning too quickly, tent the pan with foil & continue baking until done. 7. Let cake rest for 10 minutes before drizzling glaze over top.
