Long Beans Stir-Fried With Cashew Nuts & Coconut
Instead of my normal way of cooking long beans with some crushed garlic, I added in cashew nuts and grated coconut. Once done with the cooking, the cashew nuts gives a crunchy bite and the coconut a creamy taste. Goes well as a side dish with rice and curry. Ingredients: 150g long beans (cut into 3/4 inch pieces) 60g cashew nuts 2 tbsp grated coconut 1 red chilly (remove seed and sliced thinly) 2 shallots (diced) 3 tbsp olive oil salt to taste Method: When oil is heated, fry the cashew nuts until brown and crunchy. Add in the shallots, chilly and grated coconut.Continue cooking and stirring for 2-3 mins.Add in the long beans and salt to taste, stir and pour in about 5 tbsp water to soften the beans.Once the water dries up, remove from heat. related searches : Long Beans
