Love Cookies

These jam filled heart-shaped cookies will make a wonderful gift for anyone on your gift list this holiday season! Just pack them in a pretty box or a jar and add a note with wishes and you have a very thoughtful and YUMMY home-made gift.

120g sugar

1 egg yolk

250g butter, cold and cut into pieces

400g flour, sieved

1 tbsp vanilla extract

Jam (I used strawberry)

Big and small heart shaped cookie cutter

In a bowl stir together butter, sugar, vanilla extract and egg yolk. Add flour and mix to a firm dough. Cut the dough crosswise into 2 portions, wrap in clingfilm and refrigerate for 30min.

Heat the oven to 200°C. Roll out one part of the dough on a floured surface. Using the bigger cookie cutter, cut the dough into cookies. Bake until golden around the edges for about 10-12 min. When baked, cool on a wire rack.

Roll out the other part of the dough on a floured surface. Cut out the cookies like before. Now use the smaller cookie cutter to cut out the middle of the heart. Bake for about 10-12min. Tranfer to a wire rack to cool when baked.

Turn the cookies from the first part upside down and spread ½ teaspoon strawberry jam on each cookie. Sandwich them with cookies with heart-shaped holes.
