I have been experimenting with a new stevia and erythritol sweetener called Steviva Blend which is available here. It is twice as sweet as sugar so you just need to put in half the amount of sugar called for in a recipe for substituting. There is a good amount of erythritol in Steviva Blend and it tastes very close to sugar. It provided a nice shiny sugary coating in this snack mix. The Steviva brand of stevia is a very high quality without bitterness or aftertaste.


I wanted to make a low carb trail mix with the stevia sweetened dried cranberries I made. I didn’t have a lot of nuts or seeds on hand, though. In addition to the dried cranberries, I had some raw shelled almonds and a couple bags of unsweetened dry flaked coconut. The coconut turned out to be a great addition.

In order to get the sweetener baked onto the fruit and nut pieces, the pieces were coated with a frothy beaten egg white to allow the sweetener and cinnamon to stick to each piece. This made a nice thin shiny candy-like coating on each piece of the snack mix. This process could be used to candy nuts by themselves as well. I loved the crunchy sweetened coconut in this mix. The touch of cinnamon was also a great addition. I have to admit that this snack mix was extremely addicting and didn’t last long.
