Ma Po Tofu - Chinese recipe

Ingredients:
100gr. minced pork1 cake silken tofu1tsp. salt to taste 1tsp. sugar to taste3tbsp. Sichuan spicy bean paste2tbsp. chili powder2tbsp cooking oil3tbsp chili oil1tbsp Sichuan peppercorns (roasted and ground to powder)1tbsp light soy sauce1tsp fragmented black beans (rinsed and pounded)2 stalks of scallions/green onions2 cloves garlic, finely chopped1/2c. water

Cooking Method:

Cut the tofu into small pieces, daring the water from the tofu and set aside. Heat up the wok and pour in the cooking oil and chili oil.Add the chopped garlic, minced pork, soy sauce, fragmented black beans and stir fry until aromatic. Add the tofu and water, stir gently to blend the tofu (don't let them break) well with the sauce.Lower the heat and simmer for about 3-5 minutes or until the sauce thickens.Add in the roasted Sichuan Peppercorn powder and chopped scallions/green onions. Gently stir and blend well.Dish out and serve hot.
