Macarones con Chorizo (or pasta with chorizo)
This my comfort food to it’s most. And really so easy to put together you are going to want to do this probably every time you are in a rush! There is not one child in Spain that doesn’t know what “Macarones con Chorizo” is. It’s the Spanish version of Mac and Cheese! Ingredients 1 box of Penne or some thing similar to it. One Spanish-style chorizo The Spanish chorizo is mild. If you can’t find it you can use pepperoni instead. One onion 10 oz of tomato sauce. grated parmesan cheese In a deep pot boil some water and cook your pasta according to the instructions in your box. Dice your onion and sauté in a big skillet or pan with a small tbsp of olive oil until onion is translucent. About 3 minutes. ![]() Dice the chorizo as well and add to the onion. ![]() blend everything well and let the chorizo sweat out its grease to make the onions orange. Add the tomato sauce and let it fry with the onion and the chorizo so that it starts caramelizing. Drain your pasta and add to your pan. Toss everything well to combine all ingredients. Serve in different plates. Add a small bowl of grated cheese so that everyone can serve whatever they please. Make sure you have bread with this as you are going to want to wipe every site of sauce left in your plates. This obviously not a dish to have if you are on a diet, but if you are looking for comfort, this is it!
