Mad about Layers IV- Cream cheese layered crepes

My sister Rose came to KL last week and she was so busy that we only manage to meet up yesterday before she heads home to Sabah. She has not tasted crepe cakes before, so I thought it will be great to make her one to try. Too bad that did not happen as my six sense told me that we will definitely be shopping the whole day since the meeting place was at Megamall. So, I decided not bring the cake along and risk it melting into a pool of UFO (Unidentified Floating Object) inside my shopping bag.

Perhaps some other time yeah, sis?

So guess what I am having for dessert tonight? Everyone is invited to join me  =)




Recipe (adapted from Tang Shui)

Crepes
300g plain flour
3 eggs
250ml fresh milk
500ml water
50g melted butter

Cream cheese filling
250g cream cheese
50g butter
100g icing sugar-sifted
grated rind of 1/2 lemon

Method
1. Prepare batter- Make a well in the center of the flour. Pour in the eggs that has been whisk lightly. Mix with a whisk or wooden spoon. Then add milk, melted butter and water gradually until all the flour has been worked in. Strain the mixture and let rest in the fridge for at least 2 hours.

2. Light grease and heat a 6" frying pan with melted butter and pour in approx. 2 Tbsp of the batter mixture when the pan is very hot. Swirl the pan to distribute the batter and cook with medium low heat on both sides until the crepes are cooked. Repeat until all the batter has been used up.

3. To make the filling : Mix all the fillings ingredient and beat until smooth and creamy.

4. To assemble the crepe cake : Spread cream cheese filling on top of the crepe and place another layer of crepe on top. Repeat this step until all crepes has been stacked up. You may drizzle some filling on the top layer or just sprinkle it with some icing sugar or dusting powder. Decorate as desired.
