In a big pot, fry the minced onion into olive oil. Then add the diced peppers and cook them well.
Add the tomato pulp, the garlic clove, the bouquet garni, some salt, pepper, cover and let cook on low heat during 20 minutes.
Meanwhile, in a pan, heat some olive oil. Gril the 2 chicken thighs on all their faces.
Add them into the previous mix, and leave at low heat for 35 minutes.
