In a pan, cook the onions in olive oil, then add the meat. Add the spices, as you like, being careful with the ground ginger.
Once the meat start to be cooked, add the peas and the soy sauce. Leave to cook for a few minutes so liquids can evaporate.
Finely, add the fresh coriander, stir and take out of the heat.
Cut the filo pastry sheets in half. Put some stuffing at one edge, and fold the sheet in half.
Start to fold into triangles.
Fry them into hot oil until they are well golden.
There you are, your samosas are ready !
