Ingredients:
Brinjal-3 chopped finely
Potato-1 chopped finely
Tomato-3 chopped finely
Green chilli-2 chopped
Curry leaves-1 spring
Mustard seeds(kaduku)-1 tsp
Cumin seeds(jeera)-1 tsp
Red chilli powder-1 tsp
Coriander powder(malli podi)-2 tsp
Turmeric powder(manjal podi)-1 tsp
Coconut oil-1 tblpsn
Coriander leaves for Garnishing

Preparation:
In a pressure cooker add brinjal,potato,tomato,green chilli,curry leaves,red chilli powder,coriander powder,turmeric powder and salt.Pour a dash of water in it and pressure cook for 3 whistles.
Remove the pressure cooker and mash it well.
Now in a kadai add oil and splatter some mustard and cumin seeds.Add curry leaves and mix well.
Pour the mashed veggies in this and cook on a slow flame till oil separates.
Garnish with coriander leaves,Serve hot with steamed rice.
