Chicken with a creamy spinach and mushroom sauce

Ingredients

Chicken :

• 1 knob of butter
• 1 drizzle of olive oil
• 3 chicken thighs
• salt
• pepper
• thyme
• 1/2 cup water

Sauce :

• 1 knob of butter
• 1 drizzle of olive oil
• 1 shallot
• 17.5 oz mushroom
• 9 oz spinach (fresh or frozen)
• 2 cups vegan cream (we used rice)
• Salt
• Pepper

Chicken enchiladas with chili tomato sauce

Preparation

• Remove chicken bones and cut the chicken thighs in halves. Melt the butter with olive oil in a hot pan and cook the chicken 5 min on each side.
  Add salt and pepper, thyme and stir. Pour the water in the pan and cover. Cook for 45 minutes.
• Melt butter with olive oil in a hot pan, add mushrooms, sliced and stir for 5 to 10 minutes. Add chopped shallots and spinach and cook for 5 to 10 minutes more.
  Season with salt and pepper. Pour the cream in the pan and stir for about 10 minutes.
  
• Put the cooked chicken in the sauce and there you are ! Your dinner is ready !
