Pounded the chicken very thin, spread the cheese, walnuts and spinach over each piece of meat. Rolled up the meat tightly, tied it with cotton string. Browned the bundles in a bit of olive oil. Removed the meat from the pan, deglazed with chicken stock, added 2 small cans mushrooms and a bit of flour. Added about 2 Cups stock. Put chicken back pan. Covered. Simmered for about 30 minutes.
