Ingredients:
Chili oil/ I used home - made chili oil
1 red onion, peeled & finely chopped
2 fat cloves of garlic, peeled & finely chopped
2,5 teaspoons of ground cumin
2,5 tablespoons of fresh coriander stems
1,5 teaspoon of ground coriander
500 gr of mince of your choice
1 tablespoon of tomato paste
1 x 400 gr can of chopped tomatoes & their juice
400 gr can of red kidney beans
1 to 1,5 litre of beef stock or other stock , depending on the choice of the mince, 1 or 1,5 litre depending if you want more of a soup or less if you want more of a stew!
3 tablespoons of fresh coriander leaves, chopped
1 teaspoon of chili flakes
80 gr sour cream or kéfir, if needed, to serve
Fresh crusty bread, to serve

Preparation:
1. Take a large cooking pot & heat up on medium heat. Add 4 to 5 good drizzles of the chili oil. When hot, add the chopped up 0nion. Cook for 2 to 3 minutes until softened.
2. Add the garlic, chili flakes, cumin, fresh & ground coriander & cook for 1 minute. Stir well.
3. Add the mince & fry for about 5 to 10 minutes until the mince is cooked trough. Stir well.
4. Add the tomato paste, the can of chopped tomatoes, beans & stock. Bring to the boil. Reduce the heat & simmer for about 15 to 20 minutes or until reduced.
5. When ready, turn the heat off.
Serve, if you want with Kéfir or sour cream & some crusty bread on the side!
