Ingredients:
cups cooked white rice
8 prawns (remove shells, devein and chopped)
5 cloves garlic - chopped
200g frozen mixed veges (de-frost)
2 eggs
1/2 tbsp dark soy sauce
1/2 tbsp sesame oil
1 tsp pepper (or as preferred)
2 stalks of spring onions (shredded)
salt to taste
4 tbsp olive oil

Preparation:
When oil is heated, fry the garlic and prawns. Fry for about 5 mins to brown the garlic and cook the prawns.
Add in the rice, veges, dark sauce, sesame oil, pepper and salt (use sparingly). Stir to combine all these ingredients together. Make a hole in the center break in the eggs.
Very gently fold over the rice and start stirring again. You will notice the eggs have been scrambled and mix into the rice. Off the heat and lastly in goes the spring onions. Stir another 2 or 3 times and the fried rice is done.
