Ingredients:
1 lb Minced beef
1/2 Green pepper, diced
1/2 Yellow onion, diced
1 Can diced tomato with liquid, 14.5 ounce can
1 Can red kidney beans drained, 15 ounce can
2 Cups tomato juice (I used low sodium V8 for this recipe!)
1/8 Cup chili powder
2 Tsp Cumin powder
1 Tbsp Dried Oregano
1 Tbsp Sugar
1 Tsp Cayenne pepper
Salt and pepper to season

Preparation:
1. Brown ground beef in a skillet with cooking spray. Until meat is no long pink.
2. Prepare vegetables. Add cooked beef and veggies in the crock pot.
3. Add in all spices and liquid.
4. Turn on High, cook for 1 hour.
5. Top with your choice of sour cream, diced tomatoes, pickled jalapenos, chopped cilantro.
