Ingredients:
3 cups cooked white rice
5 tbsp grated coconut
6 shallots - sliced thinly
5 small dried red chillies
1 tsp mustard seeds
2 sprigs curry leaves
3 tbsp olive oil
salt to taste

Preparation:
When oil is heated, saute the shallots until light golden brown. Next goes in everything else except the rice.
Keep frying until all the ingredients becomes brown and crispy.
Finally, goes in the rice. Stir all together to mix in the rice. Remove from heat.
