Ingredients:
FIESTA BLACK BEANS:
2 cans of black beans(undrained, about 12 ozs each)
4 italian sausages links
1 can Ro-Tel tomatos(original, drained, mines was about 8ozs)
1/2 of a onion
1/2 of a bell pepper
1/4 cup-fresh cilantro
Salt and pepper to taste
1 tsp-diced jalepeno(I used the ones in jar but fresh is fine, use more if you like)
1/2 cup-chicken stock or both
1 to 2 TBSP-fresh tomatos
1 can of chopped black olives(4oz, drain if there's any liquid)
1 TBSP-lime juice
Some oil for frying
Garnish with:
extra chopped tomatos, onions, cilantro
gaucamola
Salad tortilla strips(santa fe style)
CHICKEN SEAFOOD PATTIES
12 oz can of chicken breast, drained
6 oz can of white crab meat, drained
4 oz can of shrimp, drained
1/2 cup-bread crumbs(regular or seasoned)
Salt and pepper to taste
3 eggs
1/2 cup-flour
1/4 cup-onion
1/4 cup-bell pepper
extra flour for breading
panko bread crumbs for breading
oil for frying

Preparation:
Fiesta Black Beans.......
1. Wash and cut sausage open remove meat on the inside.
2. Heat oil on medium-high, cook meat until completely brown.
3. Add bell pepper, onions, fresh and Ro-tel tomatoes, lime juice, salt and pepper, and cilantro.
4. Simmer until bell pepper and onions start to become tender.
5. Add jalapeno, olives, and chicken stock.
6. Continue cooking until everything is heated through.
7. Serve over rice and top with ganishes(I used brown rice)
Chicken Seafood Patties.........
1. In a bowl, chicken, crab, shrimp, 1 egg, onion, bell pepper, salt and pepper, bread crumb, and flour.
2. Form into round patties.(you should get about 6)
3. Beat the other 2 on a plate.
4. Take one patty coat with flour, dip in egg, and coat in panko breadcrumbs
5. Fry the patties in oil on medium-high heat for 2 to 3 minutes or until golden brown on each side.
6. Serve with some seafood sauce and Enjoy!!
TIPS:
*If you don't want or have time to cut the sausages open, you can buy it already ground.
*Just as a warning, making the patties will get messy so be prepared!!
*You can use any type of meat you want in the patties and any type meat and bean you want.
