Grilled chicken and pepper pasta

Ingredients:

Pasta-2 cups (any shape)
Onion-1 chopped
Capsicum /Bell Pepper-1 chopped
Chicken Breast -1 chopped
Tomato-4 big chopped finely or pureed
Oregano-1 tsp
Olive oil-2 tblspn
Garlic-6 crushed
Salt to taste
Sugar-1 tsp
Pepper-1 tsp
Cilantro / Coriander leaves-for garnishing
  Preparation:

Preheat the oven to the highest temperature as possible..mine went to 250°C...

In a mixing bowl add chicken,onion,capsicum and mix well.Throw in the crushed garlic,salt,pepper and mix well.Put this in a tray and set this in oven..

Grill the chicken and veggies for 20-30 min till the chicken is cooked and gets a little charred.Remove this and set aside.

In the mean time cook the pasta in lots of salted water till cooked.Drain and set aside.

Now make the sauce for this...Heat oil in a kadai..add in oregano and finely chopped tomatoes.

Cook this till the tomatoes get mushy.Add salt.sugar and pepper to this and mix well.

Add the grilled chicken and veggies to this and mix well.Simmer this for 10-15 mins(add water if the sauce gets too thick).

Now add in the pasta and mix well.

Serve hot garnished with cilantro.
