Ingredients:
1 rack of lamb (7-8 bones ideal)
1 tbsp. fresh rosemary
3 cloves garlic
3 slices bread
2 tbsp. dijon mustard
2 tbsp. olive oil
salt and pepper to taste

Preparation:
1. Season the rack generously on both sides with salt and pepper.
2. In the bowl of a food processor, combine the rosemary, garlic, and breadcrumbs. Process until it forms coarse crumbs.
3. Heat the oil in a heavy skillet over high heat. Sear the rack for about 2 minutes on each side to form a crust.
4. Off the heat, brush both sides of the lamb with the mustard until coated, then roll it in the bread crumb mixture, pressing it into the meat.
5. Place the rack back in the skillet with the bone side down. Bake in a 400 degree oven until desired doneness (130 degrees on a meat thermometer for medium rare)
6. Let rest for a few minutes, then carve between the ribs, plate, and dig in!
