Ingredients:
650g mutton - cut into bite sizes
1 tbsp grounded/blended ginger
1/2 tbsp grounded/blended garlic
1 handful (abt 40g) mint leaves
9 red chillies (slit and keep the ends intact)
10 shallots - sliced
Some spices - cinnamon, star anise and cloves
1 tbsp lime/lemon juice
3 tbsp canola oil
salt to taste

Preparation:
Mix the mutton pieces with the ginger and garlic.
When oil is heated, fry the spices, chillies and shallots for about 3-4 mins.
Put in the mint leaves and mutton.
Stir to mix all together.
Pour enough water to cover the mutton pieces and also add salt to taste.
Cook until the gravy thickens and at this point, pour in the lime/lemon juice.
Mix and stir before removing from heat.
