Ingredients:
Meat - 2 lbs of Lamb (leg) cubed or 4 pieces of Chicken Breast cut up into big bite pieces
3 pcs of potatoes (Russet or Baking potatoes)
peeled and cut up into big bite pieces :
3 curry leaves
1/2 cup of onions
3 cloves of garlic
1 cinnamon
2 star anise
1/2 cup of chicken curry powder a dash of sugar (optional)
1 tbsp of knorr chicken seasoning
1 tbsp of salt 3 tbs of oil
2 tbs of thick coconut milk or cream
1 cup of water Method:
Use an electric grinder - grind onion, garlic (If you do not want to grind, chopped them finely)

Preparation:
step 1
In a pot over medium-high heat, add oil, saute the onion and garlic mixture until fragrant.
step 2
Add cinnamon, star anise, curry leaves and fry for 1 min
step 3
Add curry powder and fry for about 2 mins or until fragrant.
step 4
Add meat and potatoes and stir fry until meat is all coated with curry mixture and cooked outside.
step 5
Add 1 cup of water and simmer over medium/low heat for about 20mins and/or potatoes are soft.
step 6
Add knorr seasoning, sugar, salt to taste. Add 2 tbs of coconut milk or cream.
step 7
Turn off heat and serve Curry with Rice or Bread.
