Ingredients:
1.5 lbs arbi ( small taro)
3 tsp amchur (dry mango powder)
1 1/4 tsp ajwain (carom seeds)
1 tsp turmeric powder
1 tsp red chilly powder
3 green chillies chopped or cut length wise
1 tbsp chopped cilantro
1" piece of ginger (julienne)
juice of half a lemon
4 tbsp olive oil
salt as per taste

Preparation:
Peel arbi and cut into thin even wedges. Wash it nicely and let it dry completely on a tea towel.
Preheat oven at 400 degrees F. Put the dried arbi in a glass or ceramic baking dish. Drizzle olive oil generously on top ( Not less than 4 tbsp). Add turmeric powder, red chilly powder, salt and carom seeds. Mix everything nicely.
Bake uncovered in the oven for 30-35 minutes or until it is tender. Stir the arbi very gently after every 10 minutes to prevent it from sticking at the sides. Remove from oven, when it is done. Add amchur powder, lemon juice ginger julienne and cilantro.
Transfer to a serving bowl garnish with cut green chillies. Serve oven fried arbi as a side with gravy dish accompanied by rice or chapatti.
