Oven roasted chicken and potatoes

Ingredients:

1 (3 to 3 and 1/2 pound) whole chicken

3 tablespoons McCormick Grill Mates Montreal Chicken Seasoning

1/4 teaspoon paprika

1 teaspoon parsley flakes

1/4 teaspoon pepper

2 tablespoons olive oil

6 medium potatoes, quartered

2 cups chicken broth
  Preparation:

Preheat oven to 450F.

Clean chicken than season inside and out with chicken seasoning, paprika, parsley and pepper. Rub chicken with olive oil. Place chicken in roasting pan. Place pan in oven, uncovered and roast chicken 30 minutes, until skin is lightly browned.

Reduce oven heat to 350F. Cook, covered for 30 minutes more.

Place potatoes in the pan. Stir in chicken broth. Continue cooking, uncovered for another 1 to 1 and 1/2 hours. Remove from the oven.

Slice chicken and serve with potatoes and pan juices if desired. You can also serve it with fresh salad or other veggies.

If you like you can also add some carrots to the pan when you add in potatoes to dd more veggies and flavor.
