Ingredients:
3 rolls of yee mee noodles - wash under running water and drained
100g minced chicken
2 tbsp anchovies/ikan bilis - soaked in water for 10 Min's and drained
6 garlic- chopped
4-5 stalks of kailan (Chinese Broccoli) - cut into 1 inch length
3 eggs
1/2 tsp dark soy sauce
1 tsp cornflour
1/2 tbsp chicken granules (optional)
salt and pepper to taste
4 tbsp oil

Preparation:
Combine chicken with soy sauce and cornflour.
When oil is heated, fry the anchovies/ikan bilis until crunchy, remove and keep aside.
Do the same to the garlic.
Add the combined chicken and fry while breaking it into tiny pieces with a spatula.
Keep frying until the meat becomes dark brown in color and looks crunchy.
Remove and keep aside.
Into the same oil, pour in 3/4 litre of water.
Then add salt, chicken granules and pepper to taste.
To serve (Per Person)
Into a serving bowl, add one roll of the yee mee, sprinkle the chicken and anchovies on top.
Pour the needed amount of stock/soup into a small pan (for per person).
Gently break the egg inside.
Simmer till the egg forms but looks runny inside.
Add in now the kailan leaves
Scoop out the egg and kailan.
Add into the prepared bowl of noodle.
Pour the soup/stock inside.
Serve immediately and if you like, with some SAMBAL BELACAN.
