Ingredients:
A) Mango-avocado guacamole ~
1 mango - peeled, pitted, and cubed
1 avocado - peeled, pitted, and lightly mashed
1 green chilli - finely diced
Juice from 1 lemon
B) Indian-style rice
1/2 cup rice - washed and drained
1 cinnamon stick
2 cloves
1 tbsp cumin
3/4 cup water plus a bit more
Salt - as needed
C) Spinach-tomato paneer
1 small onion - sliced
2 loosely-packed cups spinach
1/4 cup water
1 tomato - diced
1/2 tsp garam masala
4 oz paneer - cubed
Salt - as needed

Preparation:
A) Blend everything in a food processor until smooth.
B)
1. Heat oil in a pot and fry cinnamon, cloves, and cumin for about 30 seconds.
2. Add rice, and stir for another minute, until rice is nicely toasted.
3. Add water and salt, and cook rice.
4. Cool rice and fluff with a fork.
C)
1. Sauté onions, until they soften.
2. Add in spinach, water, and tomatoes, and once water starts simmering, stir in garam masala and salt and cook until well-blended.
3. Once spinach appears well-wilted, stir in paneer cubes and simmer for 5 more minutes.
Assemble burrito (I used store-bought tortilla wraps) and enjoy!
