In the family of original sauces for pasta... We call the parsley and peanuts pesto! You don't have to use basil to make a delicious pesto a with super fresh notes that change from traditional pesto, where pine nuts have been replaced by toasted peanuts! A no bake sauce that will go wonderfully with your pasta dishes, but also in sandwiches or bruschetta for example! :-)

How long can I keep this pesto?
You can keep this pesto for a week in the fridge in an airtight container or covered with cling film.

Can I replace the peanuts?
You can replace the peanuts with toasted almonds, ground almonds, hazelnuts (grilled or not), walnuts, pine nuts.

My roasted peanuts are salty, what should I do?
Adjust seasoning if needed. Do not add salt and taste to see if you need to add any.

Can I replace parsley?
If you don't like parsley you can make traditional green pesto with basil or a pesto called pesto alla Calabrese with roasted peppers and ricotta cheese.

Can I replace parmesan?
If you don't have parmesan in your fridge and you are a Grana Padano or Pecorino lover, don't hesitate to replace the parmesan with these cheeses, they will give a different taste to your pesto but will be fine !

How to taste this pesto?
With pasta: Simply add the sauce to your pasta as usual.
In a salad: Do not hesitate to add your pesto into a salad diluted in olive oil.
On meat/fish: This pesto will be perfect as a condiment to accompany meat or fish!
On toast: Make your best toast with this pesto and why not add roast tomatoes and a good burrata? Give us your best toast associations with this pesto in the comments!
