Ingredients:
4 thin slices boneless pork chops
2 eggs, beaten
1/4 teaspoon paprika
1/4 teaspoon pepper
1/4 teaspoon parsley flakes
Salt by taste
Panko bread crumbs
Olive oil for frying (or kind you like)

Preparation:
Trim pork chops by cutting off the fat from the sides. Place the pork chops on the cutting board and pound them thin with a meat hammer on both sides. They should be significantly larger in size after pounding.
In a medium bowl mix eggs. Add salt, pepper, paprika and parsley to the eggs and mix again. Put pork chops in the egg mixture. Let them sit in it for about 5 to 10 minutes.
Meanwhile, if you want you can make some Mashed Potatoes or some French Fries to serve with the Schnitzels. Or you can serve them with fresh salad like I did.
When ready, in a large frying-pan heat oil.
Put Panko bread crumbs on the plate. Take each Schnitzel out of the egg mixture and cover it generously with bread crumbs.
Fry the Schnitzels about 2 to 3 minutes on each side. They will be really thin and done in no time.
