Ingredients:
2 (200g) potatoes - boiled with the skin and cubed
2 eggs
1 (80g) onion - sliced thinly
3 tbsp olive oil
salt to taste

Preparation:
When oil is heated, saute the onions to soften.
Add the potatoes and keep frying for 3-4 mins.
Push the potatoes aside and break in the eggs.
Slowly mix the potatoes over the eggs.
Add salt to taste and keep stirring until you notice the potatoes becomes brown in colour.
Remove from heat.
