  • Rub flour, turmeric and salt over fish.
  • Deep fry; remove and keep aside.
  • Leave about 2 tbsp oil in the same pan.
    Saute onion, ginger and chilies.
  • Pour in oyster and soy sauce and 1/4 cup of water.
    (More water for more gravy)
  • Season with salt and pepper.
    When sauce thickens, add fish.
  • Gently stir to coat fish with sauce.
    Off the heat.
  • Add coriander leaves, spring onions and egg yolks.
    Stir again and dish out.
