Shrimp and Veggie Stir-Fry With Rice Noodles

Good evening all! I’m so beyond thrilled that its after 6:30 p.m. and STILL LIGHT OUT! This is going to do wonders for my mood over the next couple weeks!


My original plan for dinner tonight was to have leftover Chicken Tomato Fettucine and have that be it. After a bunch of discussion with some of my Weight Watchers friends about my stalled weight loss (yup, gained AGAIN on Saturday), we came to the conclusion that I desperately needed more vegetables. Like, TONS more. After I went to drop off our 2nd wedding venue payment (HOORAY!), I stopped at the produce market and got ingredients for a stir-fry for tonight. There really wasn’t a recipe, but for 4 servings, it contained:

1 lb fresh broccoli
1 large zucchini
2 orange bell peppers
2 shallots
4 mushrooms, sliced
1 Tbsp. sesame oil
garlic powder
ground ginger
2 Tbsp. lemon juice
1/2 package rice stick noodles, cooked
1 lb cooked frozen salad shrimp

This was super-satisfying, and absolutely delicious! I wish I’d added a little heat to it, which I may do in my leftover container. I also would’ve loved to make a peanut type sauce to mix in, but I don’t have plain peanut butter! I didn’t think a White Chocolate Dreams peanut sauce would’ve been too good on stir fry.


OPERATION: LOTSA VEGGIES is in effect for this week. I’m so beyond sick of working so hard and not showing any results at the scale, and after a friend of mine told me today that successful weight losers eat about 19 servings of vegetables a week, I decided I’m just going to eat them. LOTS of them. If you all happen to catch me eating a dinner without a ton of vegetables, please scold me and whip me with a steamed asparagus. There will be no dessert or anything sweet until I’ve reached my vegetable goal for the day: 5 servings of JUST VEGGIES.
