Spinach rice

Ingredients:

2 cups cooked, cooled rice (long-grained/basmati)
3 cloves garlic - minced
1-inch knob ginger - minced
1 tsp mustard seeds
2 green chillies - chopped
1 tomato - chopped
2 cups spinach - chopped
1/2 tsp turmeric
1 tbsp coriander OR rasam powder - seems odd? well, what I really wanted was coriander powder, but since I didn't have it on hand, and it IS the star in rasam powder, I thought why not...
Salt - as needed
  Preparation:

1. Sauté garlic and ginger in oil.

2. Add mustard seeds. When it starts spluttering, add in green chillies.

3. About a minute later, add in chopped tomato and cook until it softens. Add in spinach.

4. Once spinach starts to wilt, add in turmeric and rasam powder and salt, and continue to stir for a couple of minutes.

5. Remove from heat, mix in rice and coriander leaves. Serve immediately.
