Ingredients:
1 Medium Size Coral Trout
2 Big Onion
2 Fresh Red Chili
4 Red Shallots
4 Cloves Garlic
4 Tbsp. Cooking Oil
1 Prawn Paste
1 Tbsp. Brown Sugar
2 Tbsp. Tomato Ketchup
1 Tsp. Turmeric Powder
2 Calamansi
2 Ginger
Salt To Taste

Preparation:
Clean up the trout; rub with salt and turmeric powder.
1 Big onion to cut into small dice.
Slice Red chilies into Julienne
Grind fine; Shallots/Ginger/Garlic/Prawn
paste together with the brown sugar.
1 Big onion to slice thinly
Using a separate cooking oil- deep fry the fish until crispy.
Proceed to prepare the sauce.
In a preheated pan, add in cooking oil, add in all the grinded ingredients, tomato sauce and mix well. About 4 minutes later add in Tomato sauce, dice big onion and julienne cut red chilies.
Add in salt and squeeze in the Calamansi juice. The sauce to dress up the fried trout.
