Ingredients:
1 packet of soft tofu (abt 50g)
20g salted fish (soaked in water and cut into tiny pieces)
3 shallots (chopped)
1/2 inch ginger (chopped)
3 cloves garlic (chopped)
1 stalk of spring onion (cut into smaller pieces)
2 tbsp olive oil
1tsp dark soy sauce
1/2 tsp sesame oil
salt to taste
Serve With Dipping Sauce:
1 red chilly (deseeded and chopped)
2 birds eye chillies (chopped - optional)
1 clove garlic (chopped)
2tbsp lemon juice
1 tbsp light soy sauce
salt and sugar to taste
Mix all together.

Preparation:
Microwave the tofu for 3 mins and keep aside.
When oil is heated, fry the onion, garlic, ginger and salt fish until golden brown and crispy.
Add in the soy sauce, sesame oil and a pinch of salt to taste.
Pour on top of the tofu and garnish with the spring onions.
Mi all the ingredients for the dipping sauce and serve with the prepared tofu.
