  • Heat 1 tablespoon of ghee & roast the basmati rice slightly. Keep aside.
  • Heat oil in the heavy bottomed pan, add cinnamon stick, cloves, cardamom, bay leaf, green chillies and chopped onions. Saute till tender.
  • Add ginger garlic paste, mint leaves and corriander leaves.
  • Add chopped vegetables and salt to taste. Cook till tender.
  • Add coconut milk, lemon juice and the basmati rice. Cook till done.
  • Garnish with roasted cashewnuts.
  • Serve with raita.
