Making the Rounds

I spent today driving all over the country to see some of my favorite people.  It was a good day!  Before I left Lake City this morning, I ran 6 miles at an 8:35 pace.  I am beyond sore from yesterday's workout with Jillian.  Seriously.  It hurts to sit on the toilet.  The whole 'trouble zone' premise of that workout totally owns up to its name because my butt, biceps and abs have killed me today.  But it's a good kind of hurt so I'm not complaining.

After I got done with my run, I only had a few minutes to take a shower and hit the road, so I made a smoothie for breakfast:

My first destination of the day was Jacksonville.  Specifically Brittany's house for Mandy's bridal shower.  Mandy is Brittany's super sweet and beautiful cousin who was also one of my super sweet and beautiful bridesmaids.

It was great seeing Mandy as I haven't seen her in....a long time!  I also got to see Brittany, Jared, Charlotte and Naomi.




Naomi is such a doll.  And her middle name is Faye.  My middle is Faye, too.  We're like twins, except not.  Whilst at the bridal shower, I ate some of the spread Brittany had set out:

Great friends, great food, what more could you ask for?!  Honestly though, it made me want to get married again.  :)  Showers just have that effect on me--bridal showers that is, not to be confused with baby showers.  They don't have that effect on me...yet.

The second best thing about going to Brittany's (besides ya know, seeing her and all) is that she lives near Whole Paycheck Foods!

After an hour of perusing and becoming $100 poorer, I left with four bags worth of goodies:


My list going in only had about 5 things on it.  How I walked out with 4 bags, we'll never know.  Actually, we do know because that's just how I roll when it comes to that store.  I live in Lake City for crying out loud.  I have to stock up when I can!  While I was walking around Whole Foods, my stomach started to grumble.  You have to understand, I don't just run in and run out at WF, I look at something, put it down, leave, come back to it, put it down, leave, come back to it, and finally put it in my buggy.  It can be very exhausting and leaves me famished.  Even picking out something to snack on took me about 10 minutes!  



Lentil & quinoa tabouli, some dried apricots and a kombucha tea!  It hit the spot.  After I finally emerged from Whole Foods, I cruised on down to my grandparents house.  I spent a couple of hours there visiting with them and my mom who also happened to be there.  I love my family more than life.  That is all.

My grandma gave me $10 Kohls bucks that needed to be used by Tuesday so I took it as a sign from above to proceed as quickly as possible to the nearest Kohls.  I walked out with an adorable $5 shirt to wear for special plans I have next weekend.  I'll make sure to post a picture of it when I wear it. ;)  I started to get hungry again after leaving Kohls.  It was around dinner time, but since I knew it would be at least 2 more hours before I made it home, I snacked on some sunflower seeds that I bought at WF.


After much quality time with my car and mixed tape punk rock CDs circa 2004, I finally made it home.  I had one thing, and one thing only on my mind and that was chickpea burgers.


I grated a carrot with my Magic Bullet, then after a few failed attempts to combine all of the ingredients in the Magic Bullet to process, I ended up using the blender to make these patties.  I used one can of chickpeas (rinsed and drained), 1 big carrot, 1 small onion, 2 garlic cloves, 1/4 cup tahini, 1/4 cup whole wheat flour, 1/8 cup EVOO, 1/8 cup egg whites, 1 Tbsp lemon juice, 1 tsp cumin and salt & pepper.  I put all of those ingredients into the blender, then scooped the mixture in 1/4 cup increments onto a baking sheet.  I baked it at 375 for 30 minutes (flipped 'em halfway through).


The texture was spot on: no crumbling and moist inside.  However, they needed a bit more spice so I think I'll add more cumin and salt & pepper next time.  I prefer my food to have lots of flava!


I put it on a sprouted grain bun with plain greek yogurt (Thad looked at me like I was crazy for eating yogurt on a sandwich...he just doesn't know what he's missin') and my grandpa's home grown romaine lettuce.  Isn't that lettuce just pretty?!  And beet-radish-red onion-yellow tomato salad on the side.

It's 11:03pm.  That's 2 hours and 3 minutes past my bedtime.  Good night!
